Jason's Chili Recipe


As brisk Fall days hit New England, we are turning to warm and hearty recipes to feed our family and friends.  For our soup exchange party (more on that this week!), my husband Jason cooked up a big pot of chili and let it simmer on the stove while our friends gathered with glasses of wine, mircobrewed beer, artisanal cheeses and charcuterie.  We think that once you try this recipe, it'll become a staple in your kitchen for the cold winter months ahead.  Make a big pot and get cozy!

Jason's Chili


1 Tbsp. Olive Oil

2Tbsp. Butter

2 Jalapeños Chiles, Stemmed, Seeded and Diced

3 Anaheim Chiles, Stemmed, Seeded and Diced (1 for Mild Chili)

3 Poblano Chiles, Stemmed, Seeded and Diced (1 for Mild Chili)

2 Red Bell Peppers, Diced

1 Large Yellow Sweet Onion, Diced

3 Cloves of Garlic, Finely Chopped

1 lb. Sirloin Steak, trimmed and cut into 1/4 inch cubes

2 lbs. 85% lean Ground Beef

1 lb. Hot Italian Sausage with casing cut into 1/4 inch pieces (Sweet for Mild Chili)

6 strips thick-cut applewood smoked bacon, cut into 1/2 inch pieces

3 Tbsp. Chili Powder

1 Tbsp. Cayenne Pepper

1 Tbsp. Ground Coriander

1 Tbsp. Ground Cumin

1 Tbsp. Granulated Garlic

1 Tbsp. Granulated Onion

1 Tbsp. Smoked Paprika

1 tsp. salt

2 tsp. freshly ground black pepper

1 (15 oz.) can crushed tomatoes

1 c. tomato paste

2 c. chicken stock

1 c. lager beer

Two 15.5-oz. cans Black Beans, with liquid

Two 15.5-oz. cans Black Eyed Peas, with liquid

Garnish with your choice of:

Sour Cream, Scallions and/or shredded Cheddar Cheese



 Add the Olive Oil and Butter to a large stockpot over high heat.  Add the bacon and brown.  In a separate pan, add the Ground Beef, Sausage and brown with only breaking up beef slightly.  In the stockpot, add the Anaheim Chiles, Poblano Chiles, Jalapeños Chiles, Red Bell Peppers, Onions, and cook until caramelized, about 5 minutes. Add the Garlic and cook 1 minute longer.  Add the Steak to stockpot and brown, about 5 minutes. Add the now browned Ground Beef, Sausage and liquid to the stockpot. Add the chili powder, cayenne, coriander, cumin, granulated garlic, granulated onion, paprika, salt and black pepper.  Add the crushed tomato, tomato paste, and cook for 5 minutes. Stir in the beer and stock. Add the black beans and black eyed peas. Lower the heat and simmer for 2 hours.
